Bioactive peptides produced by LAB

Abstract

During the fermentation and digestion of proteins Lactic acid bacteria can release peptides with antihypertensive, antimicrobial,immunostimulating, antithrombotic, anticarcinogenic functions. They may play a beneficial role on human health. The accumulation of these peptides is strain dependent; hence, the large number of strains belonging to different species has to be screened in order to get to the best producers. Also, the conditions for the enhanced peptide production in large scale should be developed. LB-Bulgaricum Company possesses relatively large collection of Lactic acid bacteria strains (app. 1000) isolated from different sources - humans, plants, dairy products and ext. The research department of LB-Bulgaricum has an experience with screening of the strains for antihypertensive and antimicrobial activity. We have an ability to purify and characterize these peptides. Also, we plan to investigate the immunomodulatory effect of peptide fractions using appropriate in-vitro models for assessment of the increase of cytokine production. We apply modern methods for typing and subtyping of our strains – PFGE, AFLP, RAPD, DGGE, Ribotyping and so on. We estimate our strains for the presence of different probiotic properties – adhesure, resistance in bile and stomach souses, influence to the bad microbiota, and ext. In addition we have a small scale producing capabilities and hoop that in the future will produce products enriched with certain bioactive peptides. We would like to collaborate with research institutes in order to make deeper investigation on the mode of action of immunomodulatory, antimicrobial, anticarcenogenic peptides and to conduct in-vivo experiments. After that, with the integrated international efforts, we rely to develop the technologies for large-scale production of selected bioactive peptides and products with them. We need coo-research to highlight the biochemical mechanisms of the release of bioactive peptides. We would like to join the advanced research centers to take part in deeper investigation of genetical mechanisms for the expressure of the proteolytic and peptidolytic enzymes in charge of bioactive peptide accumulation.
