Régis Camus is the chef de caves for both Charles Heidsieck and Piper-Heidsieck. He has an incredibly difficult job in that he must oversee two completely different wine lineups, each with their own style and fan base. I recently had the chance to sit down with Régis and discuss his vision and philosophy for Champagne.
